For best results your categories should probably not have very long names. In case your categories do have very long names and the horizontal menu gets messed up, you’ll have to edit header.php to change the number of categories to a lower value.  Look for <?php wp_list_categories('title_li=&number=5'); ?> and change number=5 to a lower value until your categories fit neatly in the horizontal menu space.

The menu is a drop-down menu so your children categories will drop down when the parent category is hovered over.
